Ingredients
- 8 oz cod chunks
- 1 cup canned tomatoes
- 1/2 cup olives
- 1 cup spinach
- 1/2 onion, diced
- 1 tsp olive oil
- Italian herbs
Steps
- Sauté onion in oil.
- Add tomatoes, herbs, and olives; simmer 8 min.
- Add cod; simmer 5–6 min until flaky.
- Stir in spinach to wilt and serve.
