Ingredients

  • 7 oz pork tenderloin
  • 2 cups Brussels sprouts, halved
  • 1 tsp smoked paprika
  • 1 tsp olive oil
  • 1 tbsp Dijon
  • Salt & pepper

Steps

  1. Season pork; sear then roast at 425°F until 145°F.
  2. Roast Brussels with oil and paprika 18–20 min.
  3. Slice pork; toss Brussels with Dijon.
  4. Serve.
